STREET FOOD MUTABBAQ 
Have you visited Saudi Arabia and
experienced Mutabbaq, the famous Saudi street food? Oh, yes, it's a beautiful
and delectable pleasure.Mutabbaq is an arabic word means “folded” and it is a
famous street food dish in Saudi Arabia. Then Mutabbaq was brought to India
with the name of Murtabak which means multi- layered pan cake.Eaten with lemon
and green chilli, a square shaped fried (baked in some places) thin layer of
bread loaded primarily with minced meat (cooked with garlic), beaten eggs,
chopped leeks, and green onion and divided into smaller squares after cooking.
Muttabaq has two different types,
one is a vegetarian mutabbaq and the other one is sweet mutabbaq.It is called
by several other names and spellings as it travels across continents, including
Murtabak, Martabak, Matabbak, Muttabak, Metabbak, Mutabbaq, and in India, it is
referred to as a derivation of Mughlai Paratha. With a range of varieties such
as egg only, egg with minced meat, chicken, and sweet mutabbaq versions such as
banana, cream, and many more, the filling has a variety of alterations.
Mutabbaq is one the cheapest and every day snack, especially in the western
part of Saudi Arabia.Especially this dish is famous in Umrah and Hajj
seasons.Mutabbaq and its lawful variations are famous in the middle eastern
countries as well.
Growing up in the streets of Madina, Mutabbaq was the only favorite and
delightful thing for every family.Mainly when you squeeze a juicy lemon while
the heat of the mutabbaq is dissipating, place a small square in your mouth
with a relatively small bite of chilli, and listen the crunch echo of the
external crispy coating mixed with tangy lemon and sparking chilli; I can't
even express the spiciness and combination of ingredients unless you try it for
yourself.

- All-purpose flour sifted 3 Cups
 - One and half tablespoon of salt
 - Melted ghee 2 tablespoon 
 - 1 egg
 - One and half cup of water 
 - Cooking oil 2 tablespoon
 - 2 medium chopped onions
 - Mince 500grams
 - 1 tablespoon Ginger garlic paste
 - Turmeric powder ½ tablespoon
 - Half tablespoon of salt
 - 1 tablespoon red chili powder
 - 1 and half tablespoon red chili 
 - Cumin seeds roasted & crushed 1
     and ½ table spoon
 - 2 to 3 chopped green chillies 
 - Half cup of water or as required
 - 5 eggs
 - 1 tablespoon Black pepper powder
 - Half tablespoon salt
 - 1 medium deseeded & chopped
     tomato 
 - 1 cup chopped green onion
 - Half chopped fresh coriander 
 - Melted ghee
 
DIRECTIONS: 
- Combine all-purpose flour, salt,
     ghee, and egg in a mixing basin.
 - Gently add water and knead until
     dough forms, then brush with melted ghee, cover, and set aside for half an
     hour to rest.
 - Cooking oil, onion, and garlic in a
     wok till translucent.
 - Add chicken mince and  stir it well until it changes its color
 - Add ginger garlic paste in it and
     then stir it well.
 - Add turmeric powder,salt,red chilli
     powder,red chilli crushed,cumin seeds,green chillies,mix them well and
     cook them for 2-3 minutes.
 - Add the water and stir well. Cover
     and cook on low heat for 8-10 minutes, then increase to high heat and boil
     until it dries up.
 - In a mixing dish, whisk together the
     eggs, black pepper powder, and salt.
 - Add tomato,green onion,fresh
     coriander & stir well.
 - Now add cooked chicken mince,stir
     well and set aside.
 - Grease hands with ghee(melted ghee)
     and knead dough again for 10 to 12 minutes.
 - Take a small dough of 100grams and
     make a ball, apply melted ghee and roll out with the help of a rolling
     pin.
 - Fold the sides of the dough over the
     chicken and egg mixture in the centre (makes 8). 
 - On a girdle,place the paratha and
     brush melted ghee and fry on medium flame from all sides until it gets
     golden brown.
 - Cut into desired pieces and enjoy.
