Falafel
is a traditional food of the Middle East and it is also popular as a street
food or fast food item in Egypt and the Levant. The croquettes are frequently
consumed as part of a meze meal.It is mainly famous in the middle east and
people like to eat it in middle asia as well.
Falafel
became so popular that McDonald's offered a "McFalafel" as part of
its breakfast menu in Egypt for a time.In Egypt, falafel is made with fava
beans, but in the Levant, it is produced with chickpeas,put into pita bread or covered
in laffa bread with spicy sauce, tahini sauce, and a salad-like mix of tomato,
lettuce, cucumber, onion, parsley, and yoghurt. Vegetarians all over the world
love Falafel so much.The origins of falafel are debatable. The meal is thought
to have originated in Egypt and was influenced by similar Middle Asian recipes.
Later, the meal made its way north to the Levant, where chickpeas took the
place of fava beans.
People
use falafel in different sandwiches and burgers and In the Middle East it is
mostly eaten in the month of Ramadan and people love to have it in iftar.

RECIPE:
INGREDIENTS:
- 1 cup soaking dried chickpeas (do
not use canned chickpeas)
- 1/2 cup finely chopped onion
- 1 cup coarsely chopped parsley
(about a one large bunch)
- 1 cup finely diced cilantro (about a
one large bunch)
- 1 serrano or jalapeño green chile
pepper, tiny
- 3 cloves of garlic
- 1 teaspoon cumin
- 1 teaspoon of salt
DIRECTION:
- Use a mould or your hands to form
the falafel.
- Apply pressure to the sides.
- Make a hole in the middle.
- On moderate flame, heat the cooking
oil.
- Chickpeas (two cups)
- For a minimum of 12 hours, soak in
water..
- Dry the water.
- Onion
- A quarter cup of parsley and
coriander
- Four garlic cloves, cut
- Combine the ingredients.
- Blend
- A small amount of water
- This should be the standard.
- 1 teaspoon coriander
- 1 teaspoon cumin
- A quarter teaspoon of baking soda
- Salt to taste
- Combine all of the ingredients.
